A True Haitian Classic — Tassot Kabrit
Today we’re cooking Tassot Kabrit (Fried Cubed Goat Meat), a dish that holds a special place in Haitian food culture. It’s flavorful, bold, and often served at family gatherings, parties, or Sunday dinners.
This traditional Haitian meat dish is known for its deep, savory flavor and crispy golden finish. It’s one of the most popular meals you’ll find on a Haitian plate, right next to fried plantains, rice and beans, or pikliz.
As Samuel Valme, author of Dinner Ideas for the Haitian Cook, says:
“On our channel, we teach you how to cook easy traditional Haitian recipes. If you love real Haitian food, you’re in the right place.”
Ingredients for Tassot Kabrit (Fried Cubed Goat Meat)
You’ll need:
-
3 lbs goat meat (preferably leg, cut into 2–3 inch cubes)
-
1 tbsp vinegar or sour orange juice (for cleaning)
-
1 tsp salt
-
1 tsp black pepper
-
1 small onion (optional, for flavor)
-
2 cups oil (for frying)
How to Prepare Tassot Kabrit
-
Clean the Goat Meat
Rinse your meat well with vinegar or sour orange juice to remove any strong odor and taste. This is an important step when preparing goat. -
Marinate the Meat
Add salt, pepper, and two tablespoons of our Epis Dry Blend. Choose Mild for a smooth, garlicky flavor or Hot for that extra Caribbean spice. Mix well and let marinate for at least one hour or overnight for deeper flavor. -
Boil Until Tender
Place the marinated goat meat in a pot with a small amount of water. Cook on medium heat until the meat becomes tender and the water evaporates. -
Fry to Perfection
Heat oil in a deep pan. Fry the goat pieces until they’re crispy and golden brown on the outside but still juicy inside. -
Serve with Your Favorites
Tassot Kabrit pairs beautifully with rice and beans, fried plantains, and a side of pikliz for that perfect Haitian balance of spice and crunch.
Samuel Valme’s Bonus Cooking Tips
Tip #1: You can also roast the goat in the oven. Place the pieces in a baking dish and roast until golden brown.
Tip #2: When buying goat, choose cuts from the leg — they’re the most tender and flavorful for Tassot. Avoid small cuts; keep them around 2–3 inches.
Tip #3: Always clean the meat with a high-acid ingredient like vinegar or sour orange juice. This helps reduce the strong scent and gives you a cleaner flavor.
